Every grease trap pump out in Austin requires a FOG manifest form completed by your licensed liquid waste hauler. The form documents what was removed, how many gallons, where it was disposed and the hauler’s City of Austin permit number. You are required to keep the manifest on site for three years and must be able to produce it if a health inspector or Austin Water compliance officer asks for it.

Under Austin City Code Chapter 15-10 grease traps must be pumped at least once every 90 days. Service is required sooner if grease and solids reach 50% of the wetted height of the trap. Each missed service is a separate code violation with potential fines and permit revocations.
